Is it possible to connect iphone to a yaesu radio and use this app off network and/ or work with a TNC?

Unfortunately, no. Not yet, anyway.

Maybe later, I am considering some approaches to do just that. Stay tuned.
The app does show cached maps and positions (that you've browsed/tracked
recently) when off network. Apple Maps work and zoom surprisingly well
when offline, as long as you've zoomed around the same area previously. It
seems to cache the vector data and then just work with that as well as it
can.
I'll be working on filtering and localisation next.
