Question on Creating a Custom Build

Hi,

Any tips on creating a custom build with custom pre-installed apps? I need a couple of very stipped down builds with only a couple of installed apps and special launcher. Also wondering about writing my own launcher that will only display the couple of installed apps on the desktop and nothing else...essentially like a Kiosk. No playstore, gmail, anything else.

I've been looking through the docs and am not sure I'm technically capable but willing to try...or would be happy to talk to somebody who would be interested in doing the build for me.
