I know it's best to start by using objects, but I needed to create a bunch of shapes using strokes. Is it possible to combine the strokes so they can be filled like objects?

Yes you have to join the end points of the strokes. That is if you now want to make shapes out of these lines> Use the direct select tool to select two paths then selec the two end points you want to join and go to Object>Path>Join or hit Command+J.

Or You can download the plug in Concatenate which amkes it easy to join many end points at one time. look it up at Versiontracker

1. Copy all the paths;
2. Paste in Front on a new layer; Lock original layer;
3. Draw a filled rectangle and Send to Back;
4. Select paths and rectangle, Divide;
5. Discard (use group select tool) outside portion of rectangle, ungroup, now you should have all fills.
