It's good to try Minecraft if you can. A group based in Toronto (of which I am a part) has a Minecraft Professional Play server. We encourage people interested to explore it themselves. You can check out www.gamingedus.org for more information.

    kids work with Perler Beads to create Minecraft-themed mini pick axes and
    other items/characters.

    I know a couple of our local libraries have had real success doing
    minecraft programs. Both encouraged people to bring in their own laptops,
    then they started a server they all shared and had different
    creative/survival goals. When it comes to crafting, a remarkably easy
    option is doing papercraft. It's not always easy, but I find my minecraft
    kids are also the LEGO kids - and generally good at constructing models.
    It's a matter of running off a few copies, then you have a whole other
    craft available.

    What is the best resource for me to use to learn about Minecraft? I have not played.

    Regarding the use of an X-box, that is just four kids at a time, right? What are the other kids doing while those four play?
