And here you can take a look at table that shows the approximate number of photographs needed for the spherical panorama production with different focal lengths...
I use Canon 500D and both Sigma 8mm and Tokina 10-17mm. Tokina is my favorite, I need to take few more images then with Sigma 8mm, but as a result I get a better resolution of pano.

Thanks for the advice, and the links! I'm guessing the Tamron at 10 mm is not really a fisheye lens?

No, Tamron at 10 mm is ultra-wide lenses, the difference is that fisheye lenses at 10mm focal lenght have a wider field of view. Take a look at this examples...
