In a template that I use for posting the weather to Mastodon, I have the line:
Wind speed: $current.windSpeed (ave), $current.windGust (gust) $current.windDir.ordinal_compass
Which should, according to https://weewx.com/docs/4.3/customizing.htm should just show:
Wind speed: 0.2 mph (ave), 2.3 mph (gust) W
But I'm still seeing:
Wind speed: 0.2 mph (ave), 2.3 mph (gust) W (259 deg)

You are correct. That is the output from that line.
 
But I'm still seeing:
Wind speed: 0.2 mph (ave), 2.3 mph (gust) W (259 deg)
 
The tag ($current.windDir deg) will give you the (259 deg) style output.

Is that tag still in your template? If it's not, are you editing the correct template? 
Having been in the same (confusing) space before, I change, or add some random text to the template to make certain. If that doesn't propagate with the next mastodon post I know I'm looking in the wrong spot.

I tried

and, as expected, got

Wind speed: 6 mph (ave), 12 mph (gust) W

I suspect that you're either editing the wrong template, or looking at the wrong output.

That was the issue, I had 2 copies of that file and was editing the one that wasn't used.
