Would like enable debugging log for vault

Is it possible we can enable debegging log redirecting to file through config?

Yep, just set the log level in the config: https://www.vaultproject.io/docs/configuration/#log_level

You can easily redirect Vault's logs to file by doing something like "$ vault server -dev > logs.txt".
