I have a 1990 57 that has water damage on the ceiling in the cockpit.

Does anyone  know how these panels are attached?

I see no fasteners, and the trim around the panels just hides the panel seams.

This would be very handy instructions to have.  I do not know how to safely remove the headliner, but (like James) would very much like to know this.

I do not know for certain but I suspect they are held up via some type of blind connection like those used in the auto industry. Could be Velcro too.

The headliners are stapled in. You’ll need someone who is experienced with headliner work as it’s hard to stretch, glue and staple. I had to access some wiring in my master ceiling in our 1992 57’ Tolly. Both undoing and reattaching the headliner was tricky.  I hope that helps.

I probably didn't describe this well, but the problem I have appears to be larger than normal plywood panels.  Not a fabric.  Sheets are almost 5' wide x 8 1/2' long.

Only a few things come to mind for wood paneling, those are either bradnails, staples or worse, some kind of adhesive. I recommend a very close inspection of the seams. Nails make the most logical choice for servicing.

I have seen these type of plywood panels attached with heavy duty Velcro strips on a 37.  The plywood panels were covered in ultra leather with new lighting pucks installed before mounting them.  By using industrial Velcro no visible attachment could be seen on the headliner when the installation was complete.  It was a slick upgrade.  Just another possibility to consider.  Best of luck!
