at tiddlymap.org I override the color of all tags via CSS, it has nothing to do with Tiddlymap itself.
As for TiddlyMap: If you change the color of a tag-Tiddler, the color of the node corresponding to this tag tiddler will change as well, but not the nodes that are tagged with it – for this you would have to add a "node type" (see docs
