While I was in St Pete in April, I bought a Pelican Angler kayak at Dicks, and used it all over the salt water down there. Its very lightweight (32 lbs), stable (I was out in some high winds and it managed it and the associated swells well) and usable. Waterproof compartment on the back, good foot pedals. Easy to paddle, and tracks well without a rudder. I added a rope/chain anchor that held it well.
$540 or thereabouts. I can dig up the exact model if someone wants. Yellowish on top, white hull.
