Reds are a good bet in that area (nearly) any time of year, and by far my favorite fish on fly. The key to them blowing up is the surprise change in temperature where they all start feeding (random spring warmth in cool months) or when they're tied up in slots staying warm (right when cool spells hit), the latter being around Nov. and Dec.8 weight should do you good. I've never had an issue needing more than that, and I throw a 6 at the smaller guys to make it a little wild.

I spent last Thanksgiving at Mexico beach, which was about 50 miles east of Destin. The fishing was great - sea trout, ladyfish, mackeral, bluefish. I fished out of a kayak in a protected cove and also off the beach. I was told redfish were there, but didn't get one. 8 wt was fine for every thing I ran into, used a sinking line most of the time, but I think a floater would have worked as well.
