And you've hit on exactly why southerners call them bream.  Tough to tell with 100% certainty from a pic, but it looks like a pumpkinseed to me quite possibly with some bluegill genes, too.

We called them Shellcrackers; not sure how the name fits the fish

According to the Field Guide to Freshwater Fishes of Virginia, some members of the Sunfish family have Molariform teeth in their throats used for crushing the shells of snails and small mussels. Pumpkinseed and Redear are two examples of Sunfish whose primary food source is snails, mussels, and small crustation.
