I would like to understand language selection better.  When I start tesseract with the default language (English) on an image which contains both English and French, it produces correct French for the part of the image which is French. Does that mean that it was just recognizing the characters, without the benefit of the French dictionary?

From my experience dictionary has only limited effect on OCR result: e.g. adding word to dictionary does not mean that tesseract will recognize it. But on other side missing word in dictionary does not mean that tesseract will not recognize it correctly. So if you have just ascii text (without language specific symbol), English  language will provide good (best? ;-) ) output.

You can try it by yourself by turning dictionary off and on for French and evaluate OCR results.
