I'm looking for a method or config parameter to disable the image pre-processing, as I'm doing this outside of tesseract.

The only image preprocessing action that is performed is the adaptive image threshold (Otsu).
If the provided image already is monochrome, it isn't applied, so you don't have to disable it manually.

I'm not quite sure about deskewing. But I guess if your own deskewing is good enough, Tesseract will not change it.
