How to recognize font name and then ocrwith font-specific model?

Tesseract >=4.x does not provide font name information.
Version 3.x had that feature, but it was not very reliable (many fonts are difficult to distinguish, especially after preprocessing for OCR).
=> OCR tools (also outside of tesseract) are IMO not suitable for this tasks.
