How to recognize only trained images (100% recognization rate By using tesseract 4.00 (images tesseract trained))

Hi 

I have a question about tesseract .

For example I have an 500 images 

They are captured images in the web. 

and they are not hand-written.

So, I just want to tesseract to recognize these images. 

for this purpose, I jsut train thess images ? 

How to recognzie only trained images ?

I want tesseract to guarantee 100%

It can be possible ? 

My thinking is false?

I have no idea about LSTM , DEEP LEARNING

IT MEANS OVERFIT ? OVERTRAIN
