Hi,
I've never programmed anything on the Mac. Does anyone know how easy
it would be to port Tesseract to OS X? Does anyone know of any guides,
tutorials, how to's??

Extremely easy, as it already works.

This shell script will download and build it and its dependencies:
http://stuporglue.org/tako/downloads/v1/build_ocr.sh
Or you can get a pre-compiled package here :
http://stuporglue.org/tako/downloads/v1/TakOCR.pkg
It installs everything to /usr/local
