Tesseract performing bad on Debian, but perfectly on Windows. Help!

Hi everyone.
I'm working with pytesseract (python+flask) and deploying my work to a server running on Debian.

On localhost, tesseract is working perfectly. On the cloud it's not the case. The output is very poor (you can see a comparison of the output on the images).

I thought it might have something to do with the tesseract versions so here's the ouptut for "tesseract --version" in both cases:

--Windows:

My Debian version is the following (Output of cat /etc/os-release)

You use/compare 2 different tesseract version. Very old and the newest one. 
Use the same version and you will get the same result.
