Salve,
è possibile tramite time machine ( ultimo backup fatto settimana scorsa) tonare a ieri mattina, prima di aver installato illlustrator, senza dover ripristinare tutto?

The first Kernel Panic is referencing a GPU issue of some sort since DCP is Display Co-Processor.
The second panic is referencing the Secure Enclave Processor (SEP). It is hard to say if the latter is a hardware related issue, or just the laptop having compatibility issues between the backup & the system....the secure enclave chip is quirky. If the new installed of the OS resets the chip & you pull in a backup, maybe the two are out of sync due to ownership issues.
If the second panic is not due to some quirk or compatibility issue, then most likely you have a hardware issue of some sort. Make sure to disconnect all external devices in case one of them is causing a problem. If the panics occur while using an app that does video chats, then maybe that is the cause.
Are you by any chance running any anti-virus apps, cleaning/optimizer apps, or third party security software? These types of apps are known to cause all sorts of problems....including Kernel Panics.
