Is there a way to run sphinx-build the same way as rst2html to produce html files either as files or to stdout, for example "sphinx-build README.rst <magic settings>"? I ask because sphinx generates much nicer HTML than rst2html does.

Are you asking whether sphinx(-build) can output to stdout? No, it doesn't make a lot of sense. Sphinx projects has multiple documents, rst2html is aimed to render single document.
