If in doubt don’t use a Template. If you get something wrong it’s very difficult to sort out where it’s gone wrong and changes sometimes don’t get implemented. Just go into Configuration>Configure Module. Select Generic in top drop down and select Save. That will then ‘untick’ Activate. After it reboots put in the GPIO information from here

Can you take a screenshot of the Module Configuration page (NOT the Template page)?
Without knowing how you have the GPIO set up it’s guesswork.

The second image didn’t come through on the email. Can you confirm you are entering the GPIO details in Configure Module and not in Configure Template?

Its the regular basic UK light switch on the wall. I even tried to demo the setup on a test bed as per the photo attached. Same result.
I don't see any logs in the console when I flick the switch on or off. I can however see that 3.3v is running through it though but its like S1 and S2 are not doing anything.

The problem here was that the switch was a double pole switch and it was connected to the load side of live and neutral so it didn’t switch.
Plus, with respect, you are not using Tasmota so, unfortunately, you need to be asking the question in the Sonoff-Homekit forum. In fact it says specifically
