Sounds like fun. I’m considering it. Thinking about what electric plane to use. I don’t have any nitro/gas planes anymore. 
Maybe a big electric glider. 

What car? Convertible or something with a big sun roof? Or do people use FPV?

It would  require installation of a Remote ID module in the aircraft, keeping the aircraft below 400' and staying out of restricted airspace to be legal--not that I would expect any 'Karens' to be standing roadside with their smartphone drone tracker apps. Their route from Nutt, NM to Hillsboro, NM looks ok, according to the FAA UAV map  https://faa.maps.arcgis.com/apps/webappviewer/index.html?id=9c2e4406710048e19806ebf6a06754ad.  

I trust they'll have fun--bring sunscreen!
