I have a few from students at our school, and a few that I like. 

"There were never butterflies before." 3rd grader
The student made this observation after noticing and being excited that insects and butterflies were visiting after we added a garden of vegetables and flowers to our school yard.

"That's the coolest thing I've ever seen." First grader observing a full grown hornworm caterpillar on a tomato plant.
