What glue is used to glue the Perspex canopy (Ventus) to its frame (probably made from Carbon Fiber ?

Epoxy and FLock I believe. You need to abrade the internal surface of the Canopy, probably the frame as well.

A few years ago, I used a 3M two part epoxy that is rated for aircraft use. I forgot the exact number, but the 3M website has information on which epoxy glue is appropriate for acrylic to composite bonding that will withstand temperature extremes and vibration issues.

Following along on this topic and wonder what product was finally used and with what results.  I have a Standard Jantar with the fixed forward canopy that has been removed due to a failure of the factory bond to the opening.  Surprised at how easy the canopy came off and the left resin was a crumbled remainder.  Was considering using Sika Flex 295UV but also have told that West G-Flex might be better.

Don't have the Jantar Std Maintenance manual, but here's what the SZD-55 manual has on canopy repair (attached). A club member has a Jantar Std 2 - I'll check if he has a maint manual and what it says

I have disuses some repairs with my maintenance guy, and he advised Körapur 666/90

Many years ago, after sample testing, a Kestrel 19  front and centre canopy was replaced and glued using silicone rtv, the type smelling of acetic acid.  the surfaces were primed first;  that Kestrel is still flying in Alberta.
The flexability of cured silicone  reduces local stresses  at the glue line.
