Why would it not work? But the question is rather why use Qubes OS?
If it's a dedicated server, you should look into XenServer, which basically can be thought of a Qubes-Server OS ;) and is widely deployed in data centers across the world.

Qubes is a desktop operating system. If you want to use the Qubes technology on a server install Xen.

If you want to have a graphical management interface for your Xen server than you can use:

- XenServer (Citrix)
- Xen Orchestra (web based)
- VirtManager

or what ever else you like.

Xen is widely used in the server world. Amazon, Netflix, IBM softlayer etc. use Xen as part of their cloud infrastructure.
