[RELEASE] Quarkus 3.25.3

Quarkus 3.25.3 has been released, and is now available from the Maven Central repository. The quickstarts and documentation have also been updated.

The latest version is compatible with Java 17+, including Java 21.

That would be 3.25.3 for now.

But we release often so it changes from one week to another.
