What is the model of your projector? Is this something you already have?
Some new projectors will have an HDbase T input directly on them. But those are not Ethernet ports. It's a CAT cable based video extender. If that is what you have/want, you'll just need to get a Mini Display port to the correct output for an HDBaseT transmitter. Most of those use HDMI connections, so you would want a MiniDP to HDMI cable, plug that into an HDBaseT transmitter and that would send the video over to your projector's HDBaseT input.
I have seen some projectors that can use an actual ethernet port as a video input but I have not really investigated how that actually works. Always sounded like a bad idea to me and the couple I have seen were not clear on what format that input is looking for. Is it an IP stream of some kind, like H.264? Don't know the answer to that one.
If your projector doesn't have an HDBaseT input you can still make use of that so you can run CAT cable for your video runs rather than large bundles of digital video DVI/HDMI cable or worse VGA analog video. (so tired of seeing that run around theatres... time to move on folks...) The best CAT based video extenders I've seen are the Geffen units, but they are not inexpensive. Also take a look at Key Digital. There are a ton of options for this. Kramer and Atlonna are two more.
