Run the node exporter (https://github.com/prometheus/node_exporter#textfile-collector) on the exim host, and have a cron job write the metric to a text file? If you want to extract information from exim's logs, you may be interested in https://github.com/fstab/grok_exporter as well. Good luck! =)
