Freshwater valves

Okay…since everyone was helpful with my holding tank questions, here’s another. 

My 10M has three freshwater tanks, one per settee and one in the forward section of the quarter berth. It looks like the hoses from these go to a manifold of sorts on the starboard side of the motor compartment, each with a gate valve, then to a single line running to the demand pump located next to the quarter berth. 

I’m replacing all of these as they’re old and sticky. My thought is to run all new lines, putting ball valves inline at each tank, then combining them at or near the pump. I’d like to reclaim the room in the engine compartment, and it seems silly to have the extra runs to feed them there. 

Has anyone changed this, and is my thought process flawed?

P36, two freshwater tanks under settees, one freshwater tank in the v-berth (toilet flush), so quite similar.  The head has its own pump from that forward tank so that entire system is separated.  I have both settee tanks plumbed towards the bilge where they each meet a T fitting that splits them in forward and aft directions.  The forward directions have ball valves which when open allow me to do a full dump into the bilge at the end of the season (this gives the bilge and pump a nice freshwater clean).  The aft directions both appear in my engine compartment where I can choose to open one, the other, or both into a line that goes to the pressure pump.  If I open both valves the tanks will balance themselves, which is nice for trim, but it does risk both tanks draining into the bilge if I get a leak in one of them.  So I usually close one, then open the other.  That being said, I rarely do switch them.I tend to work from one tank, as it keeps the water freshest, with the other more of an emergency storage that doesn’t get used all that much.

Future plan is to setup a small transfer pump at each of the settee tanks, that will allow me cascade a “drinking” tank, a “stale/emergency” tank and a “flush” tank.  All lines are 1/2” pex.  Pressure pump only engages when water is in use, a nice sign that the system is 100% watertight.
