Hello Everyone,

Can we create a custom ISO (not virtual box or vm) using packer?

Hello.

Packer doesn't create ISOs.

In linux you can check mkisofs

For other OS, not sure.

I know it's off topic, but if someone has a suggestion for a bootable ISO tool that is easily supportable (much like Packer) I'm all ears.

Packer has helped me get our VM template process under control but we still have the other ~15% of our servers that are physical and I would like to get to the same state as our Packer templates.

Depends on the platform you are running... If it is linux, you can download a bootable ISO image from the Linux Distribution repositories and then use a kickstart  to template them... 

In terms of windows, not really sure but certainly there will be quite a few ones..

For bare metal you really want PXE boot, something like https://theforeman.org/ or http://cobbler.github.io/
