Do you have any success?
 
I'm thinking about the same task. It looks like manifest & shell-local post-processors could do the trick: https://www.packer.io/docs/post-processors/shell-local.html
However, I suspect that there will be problems with versioning.

IMHO it's best to wrapp packer for these kind of things. Use the manifests post-processor to write out information about the resulting artifact, if needed.
