with respect to fish pass, fish ladder, fischtreppe etc.

waterway=fish_pass
is seemingly not rendered (not shown on osmand)
  e.g.: https://www.openstreetmap.org/edit#map=16/48.0796/16.4012

is this a correct observation?
any other key settings in openstreetmap that leads osmand to show fish_pass
(without replacing waterway=fish_pass by stream, canal...)?

any insight welcome
thanks so far

Just an FYI, don't "replace" fish_pass with some other key/value in
OpenStreetMap to try to get OsmAnd (or any other renderer) to display
the item. OpenStreetMap has an explicit rule of **"do not tag for the
renderer"**.

If "fish_pass" is a correct (per OSM's definition of fish_pass) tag for
the on the ground item, then if this item is not rendered by OsmAnd
(and /should/ be rendered, which is itself a different, but valid,
question) then you will want to submit an issue report to OsmAnd's
github repository:

You are right.

The file rendering_types specifies which tags/keys are added to the maps.

This waterway=fish_pass is not defined in that file.

The next step is then that the tag/key from the map is rendered in OsmAnd. This is done by one of the rendering_styles (note the difference between rendering_type and rendering_style).

Please file an issue for this so that the developers can pick up.
