How to show only springs and hide cafes and so on?

Speaking for the Android version, have you tried using the search mechanism (magnifying glass icon)? You could just type spring into the "Type to search all" box, select your desired type of spring from the top of the list of search results, then tap "Show .... on the map". If it's something you do a lot, you could alternatively go the the Categories tab in search, and save a custom search for whatever set of features you want.

POIs shown like this stand out well from any map clutter, but you can also experiment with the "Map Style", "Details" and "Hide" options in the "Configure map" menu to find what best suits you.

Maybe you knew all that already, in which case you could try giving more details of what you're trying to achieve. Best wishes!
