I was gifted a Dell OptiPlex 7040 SFF that was used as a server. It has an i5 currently running Windows 10 with 2 - 1TB 2.5" 7200rpm hard drives and 8GB 2133Mhz DDR4 memory. Thoughts on what I should do with it?

Jackie, will you be at Vaco tonight? We could discuss this more. There are several types of servers that could be useful in a home setting.
Plex, Jellyfin, and Kodi are popular media servers.
Nextcloud is a great project for file hosting and offers many others features and plugins.
There's also a ton you can do by just having a Linux server running Docker and/or a hypervisor for virtual machines. You can host a variety of workloads as Docker containers or VMs.
