I've been looking for single sided screw clips like these, but I don't know the proper English word for them, so I only find the "double-sided" ones that are supposed to go over the edge but I can't used those in all positions where I need them - so what should I look for?

The fall in the category of “speed nuts”, and this particular one is a “plain flat type” speed nut.

Those are often called clip nuts.  Used in racking servers and other equipment
