I've studied with Todo-lite PhoneGap app and hereafter I know COAX provides a Couchbase Client for Phonegap plugin. But how and what can I do using COAX?

I believe coax is just a lightweight wrapper that JChris wrote as a convenience, so it doesn't have formal documentation. All it does is use XMLHTTPRequest to call the Couchbase Lite REST API. If you're comfortable using XHR and REST you can make the calls yourself if you'd rather; the REST API is documented on our website.

Jens is right, coax is just a tool I use to interact with JSON and REST services via XHR. It also has a few Couch specific hooks. If you want to get a sense of how you can use it, there are some examples in the readme here: https://github.com/jchris/coax

But you can build an app just fine without it, and Ajax library will do.
