Meeting Cancelation

The organizational committee has made the decision to cancel the March meeting due to the obvious COVID-19 concerns. 
While the decision was a fairly easy one given the current available guidance, it's no less of a bummer that this decision will disrupt the club's camaraderie.  Monthly meetings will resume as soon as possible.  Watch for updates on the website, these emails and our Facebook page.

Heads up - Wayne at High Hill has juice if you want to make cider while you’re avoiding people. (Support local orchards!) 

I have lots of great cider yeast too!! 

Also .. Barrels Direct cooperage has free shipping on 5 gallon barrels!!

I just got back from the orchard. Picked up 6.5 gallons. Going to let it ferment with the wild yeast.

Hey Ron,

I don't have any yeast for cider on hand right now, just German wheat, pilsner, and Kölsch yeast. Would you recommend any of them to make a cider? This is really only my second cider, I'm getting 5 gallons from the farm and would like to split it up to two 2.5 gallon batches. Do you think any of these could make a good cider?

I haven’t used any of those yeasts so I can’t say first hand they are good or bad, but I would probably go with the German Wheat first — if you want some cider oriented yeast I have a bunch to choose from that I can package and leave for you for at the cidery building (email me off list if interested).  Yeasts will impart some flavor and aroma much like they do on the beers they are used in - i wouldnt expect it to make a cider taste or smell like a german wheat beer but i think the fermentation would work and it could be a fun experiment. The juice is mostly culinary apples that have been stored, which may also make it unique. If it looks like it has started wild fermenting I would just knock it back with sulfites and let it rest before pitching a commercial yeast Most of my ferments I allow to start wil fermenting, it adds a lot of unique character that usually helps the finished products complexity.  

Wayne grows great apples and makes really great juice - a lot of my favorite recent ciders have used his juice! 
(also note that High Hill Orchardhas a winter CSA that I highly recommend!! support local!)

Juice is still really cold but it is definitely fermenting!

I got 3 gal. Really thick and dark. S.G.1.060

It definitely has already started but hit it with camden and gonna pitch White Labs Farmhouse yeast tomorrow.

I have a lot of 71b-1122 if anyone needs some.
