Hello, Logic Pro Flex Pitch allows you to convert monophonic audio such as saxophones, guitars, basses, and other wind instruments into MIDI. It works well for extracting single-note melodies but does not support polyphonic audio like chords or harmonically rich performances.
For polyphonic audio-to-MIDI conversion, I recommend Jam Origin MIDI Guitar 3 Software plug-in. It converts polyphonic guitar or bass playing into MIDI in real time without requiring a MIDI pickup or external hardware. It works with electric guitar, bass, cello, violin, and wind instruments and allows full control of any virtual instrument or synthesizer, including those with MPE support.
The software includes both MIDI Guitar 3 and MIDI Bass 3, so you can easily switch between instruments. You can map the sound of any performance to any synth or sampler, turning your instrument into a fully expressive MIDI controller.
Actually, you can convert any audio recording into midi.

Hi all.
So I found a guy on Youtube doing synth things with a mouth organ by running the audio through an iPad app. I'm not sure if the app is accessible though, unfortunately. Here's an example of him doing it.

When I say this isn't accessible, the app works, but the screen is blank, as far as Voiceover is concerned. I have to get my wife to take a look at it, but as is I don't see a way to change settings or even get any feedback, other than noises, when I touch the screen. Anyway, can we do something like this in Logic? I assume so, with a third party plugin, probably. it's kind of a neat idea, particularly since I play a bunch of weird instruments. Sounds like afun experiment.

That's interesting that you recommend Midi Guitar 3, for two reasons. First, Midi Guitar 2 is what the guy in the video is using on iOS, and it's totally inaccessible. But second and more importantly, according to the company, it doesn't exist yet, unless I'm missing something.
