On the device is 'developer mode' and 'usb debugging' enabled?

Is this Buildozer running on a virtual machine?
If yes, some VM can't see a physical USB so copy apk to desktop and use adb.

Is the USB cable 'power only'
If yes use a different cable

I have no experience with Google colab.
Does it provide a VM to run Buildozer? - if yes see my previous comment.

try to remove logcat in your command since google colab only creates  apk.

also add in buildozer requirements "kivy==2.0.0"

The issue is the ability of a VM such as colab to see the physical USB port.
This is a Colab issue not a Buildozer issue, you are asking the wrong group.

As an alternative, copy the apk to the Windows file system and run adb from a Windows prompt.

Thank you. But, will this enable me to debug the app?

I can't answer to your abilities.
But I did suggest using adb because that is what everybody does if Buildozer is running in a VM that can't see the USB port.
