Is OpenJDK 1.8 supported on CentOS 7.2?
We're installing with sudo yum install -y java-1.8.0-openjdk
Is there a Java compatibility list somewhere for Jenkins that I can reference?

I don't think we have specific requirements, but OpenJDK 8 on RHEL is expected to work.
CloudBees (my employer) offers commercial support for Jenkins and is more explicit about what's supported:
https://support.cloudbees.com/hc/en-us/articles/203601234-CloudBees-Jenkins-Platform-Supported-Java-Versions
If that says it's supported for CloudBees' Jenkins-based products, you can expect it to work with Jenkins.
