Gypsophila paniculata and Gypsophila elegans M.Bieb. seems quite close and confusing as per keys and details at

Plants with single flowers can be easily separated as per illustration at https://ucjeps.berkeley.edu/eflora/eflora_display.php?tid=27446

Bot are called Baby's breath as per
