Greetings and hello!

Is there a way to stitch together vertical panoramas using hugin? I've checked out other applications that can do so, Lightroom, etc., but can't seem to find any helpful information regarding hugin. Also, I'm using Darktable 3.0.

The same way you stitch any panorama. Hugin detects the control
points and arranges the images correctly. I've done it in the past,
but haven't found it very useful. The main issue I had was deciding
on a projection.

Do they need something special?

I've done vertical panos using Hugin. Occasionally, I've had to rotate
the original images (outside of Hugin) and make the panorama as a
horizontal one, so I could get a reasonable projection.

As long as it preserves the correct orientation information for the
images. I've had image processing software that takes a portrait image
and marks it as landscape, throwing things off.

Yes, you can, but the problem is in projections.
Instead of such presets as "equirectangular, architectural, mercator, cylindrical" I would make two sliders for proportional vertical compression.
One slider for tops, the other one for bottoms, with "stop" points at these presets.

The cylindrical projection uses no vertical compression, the other projections bend the tops and bottoms, proportionally,  but often one projection is "too much" while the other is "too little" compressed.
This reply is rather to the developers, to allow to modify the vertical and horizontal compression in graphic mode.
It can be useful also for art creators, to extend the compression sliders beyond the natural limits of cylindrical projection -  to stretch the sky or ground and create an impression of distance.

This panorama is an example that horizontal and vertical compression needs to be adjusted separately from top, bottom, left and right starting from the midpoint.

This example pano should be compressed only from the bottom and right.
