Thanks for the response, If I change to GWT 2.9 I can still use jdk 17? Or I have to go lower?

I think so, as long as you are not using any language features of Java > 8

Generally Java 17 works for running GWT but source level still needs to be 11 for GWT client/shared code as GWT only supports compiling Java 11 source files. Server code can be anything. If you use GWT-RPC you might need to add some --add-opens to your server JVM: https://github.com/gwtproject/gwt/pull/9791
