Newbie question on Wordpress for GCP

Hi all, I successfully created a public Wordpress site on GCE. Prior to this, I've always used Bluehost.

With Bluehost, I can have unlimited add-on domains to create many sites for 1 low price. But, I'm suspecting performance will be better with GCE and scalability will be easier.

I have 1 site that will get a lot of traffic, and I'm thinking of it residing on it's own project/vm (might have the terminology wrong there).

The others don't see a lot of traffic. Is it better to create a new project/vm for each, or is there a way to have all those on the same project/VM (is that even possible) in order to keep monthly costs down?
