That sounds odd. The demo-app profile isn't limited in any way I can think of. Specifying the Elastic Agent Profile ID is all you should have to do.
What does the console say for the job while it is "waiting for an agent"? You should see it saying things like:
[go] Waiting to create agent pod.
[go] Creating pod: k8s-ea-b65a313d-fb8d-41db-b13e-7fd3394993c5
[go] Agent pod k8s-ea-b65a313d-fb8d-41db-b13e-7fd3394993c5 created. Waiting for it to register to the GoCD server.
[go] Job Started: 2022-03-20 09:57:42 GMT
Do you see it creating a pod within your cluster? By default you should see a pod like "k8s-ea-<UUID>" being created, and transition to running state within Kubernetes.
Perhaps you can share the rest of the job/pipeline configuration if you can't figure out what is going on.
