Chapter 8 of this report shows an approach for calculating the costs associated with household food waste: https://wrap.org.uk/sites/default/files/2020-12/Methods-used-for-Household-Food-and-Drink-Waste-in-the-UK-2012.pdf. In short, it involved taking government data on household spend for certain food categories and dividing by data on the weight of purchases (from the same source), giving the cost per kg of the food wasted. Alternatives include collating data from supermarket websites.
