Let me go directly to my questions and will provide a breakdown of what I need to get done :

In order to achieve some customization elegantly I would need to know the followings:
1. is it possible to attach custom javascript to tasks, if so please point me to how?
2. from performance or other point of view is there any recommendation as to number of fields one should add to tasks or any other docs?
3. is it possible to with workflows create a new task upon saving of another task?

Thank you!

Not really - how many are you planning to add?

You can do that on the server-side. You will have to wrap this in your own plugin / app.

Thank you!
