All-in-one course.xml file. Building a course in a single course file

I am converting 50 courses from a different non-edx system. I want to convert them to OLX. As I'm reading the docs, I see that it is possible to create an entire course in a single course.xml file. I have had zero luck trying to find an example of this so far. 

If you have created a course that is self-contained in a single xml file, I would very much like to see the xml file. 

Our courses have a simple structure

Module

----Chapter

----|----Topic

Each topic is simply a video. That's it. 

It seems like overkill to recreate the entire directory structure and fill it with one-line independent files.

DON'T USE mater branch. Instead, you should use

pmitros/learning-at-scale
