The best place for installation instructions is the Installation Documentation at https://wiki.lyrasis.org/display/DSDOC7x/Installing+DSpace
Currently, we don't have separate installation tutorials.
However, if you want to learn more about DSpace 7 in general, we had a number of presentations and a workshop at the OR2021 conference in June of this year. All those videos/slides are at https://wiki.lyrasis.org/display/DSPACE/DSpace+7+at+OR2021
