Hey Mike, it's possible, but I've not tried it.
Using the BT Serial Port protocol and gpsd is feasible. However,
iirc, IOS
doesn't support BT Serial?
You could/should pair your phone, then try
rfcomm bind rfcomm0 <mac_address>
<channel>
sudo systemctl stop gpsd
sudo gpsd -N -n -b /dev/rfcomm0
cgps
if that works, you can add those gpsd options to /etc/default/gpsd
and let us know please,

I don't know where this fits quite yet, but this iPhone app lets
you send real GPS data via IP or BLE to another device. I've got
it connected to the QTH app on macOS right now using BLE and it
works great. I want to add GPS to my DigiPi mobile setup and was
looking for a way to do this without having to keep a GPS dongle
(and thus the DigiPi) exposed to a clear shot of the sky. If I'm
missing something here, let me know!
